Ingredients: (serves 4)
200g sweet potato
200g gourmet potatoes
200g pumpkin
½ red onion, sliced
6 eggs
1/2 cup low-fat milk
20g parmesan cheese, grated
Sea salt & pepper
Method:
Peel and dice potatoes and pumpkin into 3cm cubes, thinly slice onion. Place onto a baking tray, drizzle generously with olive oil, freshly ground sea salt and pepper. Bake in 220oC pre-heated oven for 25-30 minutes until light gold and tender.
Remove vegetables from oven and reduce heat to 190oC. Spread vegetables over the base of a greased pie or tart dish. Whisk eggs and milk with a fork, add cheese, pour mixture over the top of the vegetables and season with salt and pepper. Bake frittata for 25-30 minutes or until top is set and golden in colour. Serve with salad.
