We have peaches!

Peaches were originally grown in China around 3000 years ago and are now grown in at least 64 countries. Peaches are a good source of vitamin A, vitamin C, fibre and are full of antioxidants. They can be cooked, dried, roasted, grilled, made into jam and of course eaten fresh. 
Recently we mentioned on our Facebook page that we believe peaches taste their best when picked ripe. If picked too early the peach does not produce its optimal flavour. For this reason, we don’t stock peaches until we think they are at their prime. And now, we are glad to say we have peaches!

Oven-baked roasted vegetable Frittata



Want a quick, easy to whip up midweek recipe that is stocked up with vegetables? This frittata is not only quick and easy, it is very versatile. You can add any vegetables you like. Order your vegetables online from us and we’ll deliver them for you. All you need to do is peel and bake!
Ingredients: (serves 4)
200g sweet potato
200g gourmet potatoes
200g pumpkin
½ red onion, sliced
6 eggs
1/2 cup low-fat milk
20g parmesan cheese, grated
Sea salt & pepper

Method:
Peel and dice potatoes and pumpkin into 3cm cubes, thinly slice onion. Place onto a baking tray, drizzle generously with olive oil, freshly ground sea salt and pepper. Bake in 220oC pre-heated oven for 25-30 minutes until light gold and tender.
Remove vegetables from oven and reduce heat to 190oC. Spread vegetables over the base of a greased pie or tart dish. Whisk eggs and milk with a fork, add cheese, pour mixture over the top of the vegetables and season with salt and pepper. Bake frittata for 25-30 minutes or until top is set and golden in colour. Serve with salad.

Stone fruit; best when ripe!

You may have recently noticed that some local supermarkets are already stocking stone fruit. Stone fruit is tastiest when picked once ripe, not green, and quite simply the quality of stone fruit currently being stocked is not up to our standard. John (our fruit taster extraordinaire) samples various stone fruit every morning and he will only select it when it is palatable. The Lettuce Shop will supply peaches, nectarines and plums once they are at their optimal ripeness. So hang in there, you will see stone fruit on our website very soon!
